Thai Cucumber Salad
A sweet, sour, refreshing salad perfect for serving alongside our Thai Curry Packs.
- Gently heat the vinegar and sugar in a pan until the sugar dissolves.
- Take it off the heat, add the fish sauce and leave to cool.
- When cool, add the dressing to the cucumber, chilli and spring onions and mix together.
- Before serving, garnish with toasted peanuts and fresh coriander.
The dressing is like a pickling liquor, so once the cucumber is added it will keep quite well. Simply add the garnish before serving.
The dressing will also work well with other vegetables like carrots and beetroot. To make a milder version, reduce or eliminate the chilli. It is best to use fresh red chilli for this dish as it adds a sweet, fruity flavour, as well as heat.
