A perfect summer salad using fresh, raw veg.
- Julienne the carrot and cucumber (chop them into small matchstick-like pieces).
- Finely chop the tomato, avocado and spring onion.
- Mix all your vegetables together.
- Add the avocado, lime juice, chilli and olive oil.
- Garnish with the spinach leaves and parsley and season with salt and pepper.
- For best results, leave for an hour at room temperature before serving.
