Everything tastes better when served with this salad. We serve it at every staff event, and everyone loves the crunch and colour that it brings. It also makes a smashing topping for burgers!
Instructions: Mix Together 350g grated carrot, 1/2 tbsp of lemon juice, 1/4 tsp of sugar and a pinch of salt. Heat 1 tbsp of sunflower oil in a small saucepan over a medium heat. Add the mustard and cumin seeds, heating the seeds until they start to pop. Add the turmeric, remove the pan from the heat and pour over the carrot mixture. Mix, cover and leave for 30 minutes. We recommend that you garnish with coriander leave just before serving.
