Garlic & Coconut Pickle Spice Blend

Serves: 4 – 6 Vegetarian Vegetarian Vegan Vegan Gluten Free Gluten Free

We find this pickle is best served alongside a full meal, as it's fiery enough that a little goes a long way!

This is a very traditional recipe, balancing savoury garlic, sweet coconut and intense chilli heat.

  1. Heat 1 tsp of sunflower oil in a pan, add 20g of sliced garlic and saute for 2 minutes.
  2. Add sachet no.1 (coconut) and mix well.
  3. Remove from heat and allow to cool.
  4. In a blender add the garlic, salt and coconut with sachet no.2 (chilli powder) blend till smooth.
  5. Store mix in an air tight jar, or container in the fridge, for up to 2 months.
