Carrot Salad

Serves: 2 – 4 as a side Vegetarian Vegetarian Vegan Vegan Gluten Free Gluten Free

Everything tastes better when served with this salad. We serve it at every staff event, and everyone loves the crunch and colour that it brings. It also makes a smashing topping for burgers!

Storage Information: Store in cool dark place. All Curry Packs have a minimum 4 months shelf life or can be frozen for up to 6 months.

  1. Mix together the carrots, lemon juice, salt and sugar.
  2. Heat the oil in a small saucepan over a medium heat, then add the mustard and cumin seeds.
  3. Cover and shake the pan until the seeds start to pop.
  4. Add the turmeric, then remove the pan from the heat and pour the spices over the carrots.
  5. Mix everything together, cover and leave to rest for 30 minutes.
  6. Garnish with coriander leaves just before serving.
