Lockdown life with the Rafi's team
As we're sure you'll know, our team have been working incredibly hard to ensure you can still enjoy the comforts of your favourite Rafi's Curry Packs throughout lockdown. However, when we aren't making your delicious Curry Packs, we're at home looking for ways to keep entertained. That usually involves a lot of cooking and experimenting with flavours in our foodie family.
For instance, Toni from our Burscough (Booths) store has been testing out our Curry Puffs recipe from The Rafi's Spicebox Cookbook. They were of course filled to the brim with some delicious leftover Rafi's curry! They're incredibly simple to make and a great recipe to get your kids involved with one afternoon.
When we aren't cooking and experimenting with Curry Packs, our team can be found trying their hand at other cuisines. Louise, our HR Manager, has been perfecting her 'Late Night Crispy Beef in OK Sauce' recipe and can throw this incredible dish together in just 15 minutes flat! Ideal after a long day of ensuring the health and well-being of our team is optimum.
Jasmine, our Marketing & Comms. Coordinator, has also been practicing her favourite Chinese takeaway recipes. She recently made her first attempt at 'Chilli Salt Tofu' and was very pleased with the outcome. It definitely filled the Chinese takeaway shaped hole in her life!
Keeping the tofu theme strong, our Fenwick (Newcastle) Food Hall concession manager, Cheniece, has been eating some home-cooked yet restaurant worthy Tofu Katsu - we've added a photo below for you to check out.
If the team aren't cooking full meals, they're testing our their baking skills! Jo from our accounts department has been indulging in her husband's soda bread recipe. What could be better than having freshly baked bread in your kitchen?
When our team aren't busy in the kitchen, some of them have been meeting on Zoom for a weekly quiz and a couple of well-deserved drinks to wind down. Knowledge has certainly been tested (along with some working relationships!!) over the past few weeks as the team have played some difficult rounds of trivia! It seems like many of us are trying out weekly family & friend quizzes, perhaps we'll all be walking out of lockdown with full tummies and higher IQs...
We're all trying our best to find a sense of normality in the midst of this madness and we are all very lucky here at Rafi's Spicebox to be surrounded by a brilliant team. We have a safe and positive space to share with one another online and keep in touch during this time - we mostly share photos of our lunches and evening meals, but these small interactions are our normality. Food is something we all have in common and it's something we all share. Be that Ian & Kevin cooking lunches for the team throughout the week or sharing recipes to encourage one another's foodie journey. It is good food that helps us feel connected, each of us hears the words of our fellow colleagues echoed as we cook up a favourite Curry Pack or follow Rafi's timeless rice recipe.
