Spiced Scrambled Eggs
Great for brunch, lunch or a light dinner.
- Heat the butter in a pan. Add the onion, tomato, chilli and cumin seeds and fry for 5 - 10 minutes until soft.
- Add the turmeric, salt and pepper and fry for 1 minute.
- Turn the heat down and add the eggs. Cook slowly, stirring gently and continuously, breaking up any lumps.
- When the eggs are soft and scrambled, add the coriander and check the final seasoning.
- Serve on toast or with chapatis.
