Mackerel Vindaloo

Vindaloo is a strongly-flavoured curry which pairs perfectly with mackerel.

Instructions

  1. Empty the Vindaloo Curry Pack into the pan with the water, tomato purée, and vinegar.
  2. Simmer until the dried onion breaks down.
  3. For best results, leave the sauce to stand overnight.
  4. Grill the mackerel lightly on both sides and pour the reheated sauce over the top. This will stop the fish breaking up.
  5. Serve with a lemon garnish alongside rice and fresh green vegetables such as spinach or green beans.
