Palak Paneer

Serves: 2 – 4 as a side Vegetarian Vegetarian Vegan Vegan

A lightly spiced sauce to complement traditional Indian curd cheese and spinach puree. A well-balanced vegetarian side dish, which will serve two if served as a main.

Storage Information: Store in cool dark place. All Curry Packs have a minimum 4 months shelf life or can be frozen for up to 6 months.

  1. Blanch 200g of spinach and immediately soak in iced water.
  2. Once cool, strain and blend spinach to a puree with a little water, then keep aside.
  3. Gently fry 200g cubed paneer until golden and keep aside.
  4. Empty the contents of the pack into a pan with 200ml of water and simmer for 5 minutes.
  5. Add 2 fresh chopped tomatoes and simmer for a further 2 minutes.
  6. Add the spinach and paneer then simmer for 10 minutes until the sauce is fairly thick.
  7. Garnish with double cream (optional).
  8. Season and serve.
