Ian's Lemon Raita

Lemony Cucumber Raita


1 red onion
1 lemon
½ lemon zest
½ a cucumber, chopped
1 large handful of fresh coriander
1 tub of yoghurt

  1. Very finely chop the red onion and place in a large bowl.
  2. Squeeze in the lemon juice and season with salt and pepper.
  3. Mix well and leave for 15-20 minutes.
  4. Add the yoghurt, chopped cucumber, lemon zest and roughly chopped coriander. Mix well and serve.

It is important to give the onion and lemon juice time once mixed together, as the lemon will take the harsh edge off the raw onion, making it nice and sweet.

This is a zesty accompaniment which works well with tomato-based curries such as Rafi’s Madras Curry Pack.
