Vegetable Tikka kebabs
  • 2 Large courgettes cut in to large chunks

  • 2 Yellow peppers cut in to large chunks

  • 2 Red onions cut in to large chunks

  • 1/2 sachet of Laziza chicken tikka marinade *

  • 2-3 tbsp oilve oil

  • Juice of 1 lime

  • 6-8 metal or pre-soaked bamboo skewers

Vegetable kebabs with a spicy tikka coating

Instructions:

Place your vegetables in a colander, sprinkle with salt and leave for 30 minutes. Rinse off the salt and dry well, sprinkle over the marinade powder, oil and lemon juice and mix well. Thread the vegetables on to skewers and place on a pre-heated BBQ cook till the vegetables are golden brown. Serve with a herb salad.

This is a spicy marinade, to make it milder simply mix in some yoghurt before threading on to the skewers. This recipe will work well with most vegetables.
