Gujarati Green Beans

Gujarati Green Beans
  • 250g Runner Beans, finely sliced crossways

  • 2 Tbsp Sunflower Oil or other neutral oil

  • Salt, to taste

  • 1/2 tsp Turmeric *

  • 6-8 Curry Leaves, finely sliced *

  • 20g Fine Desiccated Coconut

Description:

One of the simpliest side dishes and great with rich curries.

Instructions:

Heat the oil in a wok, add the beans, then coconut, turmeric, and curry leaves. Stir-fry over high heat for 2 minutes. Add 2 Tbsp of water and stir well, and allow the water to evaporate. Season to taste and serve.

    Very nice! Just tried this with Broad beans from the garden-added in a few shallots and used the mixture provided from the York shop. Enjoyed by all!

    Can you tell me what sort of coconut and how much? It's mentioned in the instructions but not in the ingredients.

    I have corrected the recipe thanks for spotting the error. It is 20g of fine desiccated coconut you could always use 10g of creamed coconut if you can’t get this.
