Chicken with orange and lemon glaze
Ingredients:

Whole chicken leg portions (with thigh)

2 tbsp Carvalho's orange/lemon pickle

Juice of 1 lime

Salt and pepper to taste

2 Tbsp Olive oil
Description:
A great tangy glaze for grilled or BBQ chicken
Instructions:
Mix together the pickle, oil, lime juice and seasoning. Make 3 or 4 deep cuts in to each chicken portion, rub in the marinade all over chicken working in to the cuts. Cover and leave in fridge overnight. Place chicken on a hot BBQ and baste regularly wih the remaining marinade. Cook for 4 - 5 minutes on each side or cooked through. Serve with a green herb salad and simple grilled tomatoes.
This will work equally well under the grill if BBQ weather doesn't arrive! Why not try it with Mackerel with Kashmiri mariande or vegetable Tikka kebabs or both.
