Asafetida has a strong sulphurous smell, but used in small amounts it adds a pleasant savoury flavour. It must be cooked well to get the best flavour and avoid bitterness. Needs to be stored away from other foods as the odour will cling to anything it encounters. It is good in dhals and other vegetable dishes.
