Madras is really a nickname, the traditional name should be a Chettiyar Kari. These were the wealthy non-vegetarian landlords of Tamil Nadu, who in the 1860's began producing a curry powder called Madras for export and do so even today.
Our Madras has a tomato-based sauce with earthy flavoured spices and a tang of tamarind. It is ideal with stronger meats like beef and it is also the perfect pack to make Keema - Minced meat curry.
