'Do' means twice and 'piyaz' means onions. Delicately spiced and finished with yoghurt. The Do-Piyaza originates from the Bengal region where there are many Muslims.

The first batch of onions makes the gravy and the second batch is left in thick slices or quarters and added during the last 5 minutes of cooking. For best results cook open so there are no excessive fluids.
