My favourite curry this time of year is hot madras with sausage, sweet potato and butter beans. Make up the sauce and cook the sausage slowly till tender and preferably leave overnight. Re heat and add sweet potato and cook for 20 minutes, finally add the butter beans and cook for further 10 minutes.
