This is a more savoury coconut based curry from Southern Thailand with smoky flavours from dried red chillies. It usually has a slightly thicker consitency than the green curry although this can be adjusted during cooking if required.
This is excellent with pork and we always advise adding some nice firm vegetables to the Thai curries to add a nice texture. Green beans work very well.
