A traditional Vindaloo would once have been a combination of 'Vinha' - wine vinegar and 'd'Alho' - garlic. Also, as it was cooked by Catholics pork was the most popular meat to use.
Our version uses a complex blend of aromatic spices including fennel, cloves and star anise that work beautifully with the vinegar and chilli.
