Fried Okra (Bhendi shak)

350g okra, washed and dried
½ teaspoon turmeric
½ teaspoon chilli powder
1 teaspoon coriander powder
Salt to taste
3 tablespoons oil
½ teaspoon mustard seeds
Coriander leaves and chopped tomatoes to garnish
 
Cut the okra into 2.5cm slices to look like stars. Rub them with turmeric powder, chilli powder and salt. Heat the oil in a large frying pan or wok and fry the mustard seed until they crackle. Add the okra and fry them uncovered until they are cooked and nearly crisp. Serve hot garnish with the coriander and the tomatoes.

Having previously avoided Okra because of it's gloopyness, this version is crisp and very tasty. Great for a quick snack. Thanks!
