4 tbsp oil
1 large onion, finely chopped
2.5cm fresh ginger, crushed
4 cloves garlic, crushed
1 tsp cumin powder
2 tsp coriander powder
½ tsp turmeric powder
2 tsp chilli powder, or to taste
salt to taste
225g cluster beans (guvar), stringed and cut into 2.5cm pieces
100g of Soya chunks
2 tbsp tomato puree
Handful of coriander leaves
Heat the oil in a heavy pan and fry the onion until golden brown. Add the ginger and garlic continue frying until the raw smell disappears. Add the powdered spices, salt and continue to fry until the oil separates. Add the beans, Soya chunks and a little hot water. Mix well. Cover the pan and simmer until the beans are done and the soya is tender. Add the tomato puree and coriander leaves. Simmer for 2 more minutes. Serve cold as a sandwich filling or hot with a yoghurt raitha.
