Kheer (Rice Pudding)

Serves 4-6
 
1 tbsp ghee or butter
1 5cm piece cinnamon stick
175g soft brown sugar (or 125g jaggery if available)
115g coarsely ground rice
1.1l / 2 pints full cream milk
1 tsp ground cardamon
50g sultanas
25g almond flakes
½ tsp freshly ground nutmeg, to serve
 
In a heavy pan, melt the ghee and fry the cinnamon and sugar. Keep frying until the sugar begins to caramelise. Reduce the heat immediately when this happens.
 
Add the rice and half of the milk. Bring to theboil, stirring constantly to avoid the milk boiling over. Reduce the heat and simmer until the rice is cooked, stirring regularly.
