Red Mullet Mulligatanni

Rafis Mulligatanni curry pack
400ml water
400ml can coconut milk
1.2 kg Red mullet or Snapper cleaned and cut in to 1.5" slices (use the heads and tails too for more flavour)
Juice of 2 limes
2 tbsp desiccated coconut (dry toasted in a dry pan)
2 spring onions finely sliced green part included

Empty Mulligatanni curry pack, water and coconut milk in to a pan and simmer for 20 minutes. For extra flavour leave the sauce to stand overnight.

Re-heat the sauce and simply add the fish. Cook for 20 minutes or until the fish is cooked. Garnish with the toasted coconut, spring onion and lime juice. Serve with a crisp green salad and warm naan bread.
