Mackerel Vindaloo

Rafi's Vindaloo Masala
500ml water
2 tbsp tomato puree
1tbsp vinegar (cider is good) any other will do
6/8 fresh Mackerel fillets
Lemon to garnish

Empty Masala into the pan with the water, tomato puree and vinegar, simmer untill the onions break down. For best results leave sauce to stand overnight. Grill the mackerel lightly on both sides and pour re-heated sauce over the top. This will stop fish breaking up. Serve with rice and fresh green vegetables such as spinach or green beans.
