Almonds (Badam)

Almonds were introduced to Indian cookery buy the mughuls.They are actually native to the Mediterranean although a small amount grow in India mainly in the Kashmir area.
They can be ground to to create a base for curries as with the Pasanda. They can be sliced and toasted as a nice garnish. Biyrani and meat dishes are somtimes dusted with them.
Also used alot in Indian sweets such as Badam halwa, which is made with powdered almonds and sugar and Kulfi a luxurious ice cream made with creamy milk. Almond oil is used in cooking and as a beauty aid for the hair and the skin.
