Like butter, it is only in recent years that processed cheese has been sold in India. Until then families made their own cheese and this was done by adding rennet, or a souring agent like lime juice, to boiling milk to make it curdle. This is then wrapped in muslin and put under pressure for 2-3 hours to remove all the whey. This firm cheese can then be fried or cooked in a curry.
