Use the wonderful baby spinach that is now available. It adds a wonderful fresh finish to any curry as well as being packed full of goodness and vibrant colour.
The obvious choices would be the Saag Gosht, Bombay Potato and Mattar Paneer but it is also great in other dishes such as Madras, Rogan Josh and Balti.
The important thing with young spinach is that it hardly needs any cooking so we suggest that it is added at the very last minute and allowed to wilt slightly before serving.
