Unless you are using chicken on the bone it will dry out as it does not need much cooking time. Try chopping a whole chicken in to six pieces if you are not worried about bones. This will keep the meat much more moist. We always suggest using meat on the bone as it keeps it succulent and it is also where all the flavour is.
